Dilled Meatballs
~ 60 Meatballs
Preheat Oven To 375*
Meatballs
1 # Beef, Ground
1/2 # Ground Pork
1/2 # Ground Veal
2 Tsp Salt
1/4 Tsp Pepper
2 Eggs, Slightly Beaten
1/3 C Onion, Grated
1/2 C Heavy Cream
Dry Bread Crumbs
1/2 C Butter
With Heavy Duty Mixer, Combine Beef, Pork, Veal, Salt, Pepper,
Eggs, Onion, & Cream.* Shape Into 1-Inch Balls With Wet Hands.
Roll In Bread Crumbs. Arrange In Jelly Roll Pan &
Refrigerate While Preparing Sauce.
Makes 60
Dill Sauce
1/2 C Butter
1/4 C Flour
2 C Chicken Broth, Hot
2 C Sour Cream
1 1/2 T Dill Weed
Dill Sauce:
Melt Butter; Stir In Flour And Cook ~2 Minutes. Stir In Hot
Broth. Cook & Stir Over Low Heat Until Thickened.
Remove From Heat & Stir In Sour Cream & Dillweed. Chill.
Preheat Oven To 375*. Drizzle Meatballs With 1/2 C Butter &
Bake 20-30 Minutes Until Browned, Turning Occasionally.
Reheat Sauce & Add Meatballs, Stirring To Coat Evenly.
