Herb Buttermilk Biscuits
1 cup flour
2 teaspoons baking powder
1/8 teaspoon baking soda
1/8 teaspoon salt
1 teaspoon sugar
2 tablespoons butter; chilled, cut into pieces
1 teaspoon thyme; chopped
1/2 teaspoon mixed peppercorns; crushed
1/2 cup buttermilk
In a bowl, mix flour, baking powder, baking soda, salt and sugar. Cut in
chilled butter
until the mixture resembles cornmeal. Add buttermilk, thyme,
and peppercorns.
Stir until the dough comes together and stop. Do not over
mix. Pour the dough on
a floured board and dust the top with flour, fold the
dough over on itself 4 or 5 times
and level to one inch thick. Cut your biscuits
with a 2-inch cutter pressing straight down
or the biscuits will not raise
properly. Place the biscuits on a baking sheet so they just
touch. Bake at
400 degrees F for 15 minutes, turn the pan and bake another 12 minutes.
The
reason we turn the pan is our oven doesnt bake evenly.
Yield: 8 biscuits
