Sausage Stuffing

1/2 pound ground sausage
1 large pkg. herb stuffing mix
1 stalk celery, chopped
1 small onion, chopped
1 tbsp. parsley flakes
1 can chicken broth
(Note: I also like to add 1/2 cup of chopped turkey giblets)

Cook sausage in a skillet over medium-high heat in about 1/2 cup of water; drain.
In a large bowl mix together all of the ingredients, except for the chicken
broth. Next, add the broth a little at a time (starting with a 1/4 cup) until the dressing
mixture is moist - not soaking wet, just moist. Now you can
either stuff your turkey with the dressing and bake according the roasting directions, or
put the dressing in a casserole dish and bake at 350 degrees
for 30-45 minutes until top is nicely browned. This recipe can easily be doubled for large turkeys
and hungry people.
