Blue Garlic

Many people complain that minced or garlic paste turn blue
or green, when store in refrigerator. Some times garlic
turns green or blue when pickled. Garlic contains
water-soluble pigments that slowly turn blue or purple. This
mostly happen, with immature garlic, when the cloves are
still green from the center. Some times in the humid
condition, garlic can sprout (starts its growth). But the
garlic flavor remains unchanged; sometimes it tastes bitter
if stored for long time in the refrigerator. It is totally
safe to eat. Garlic exposed to direct sunlight can also turn
green on grounding and can acquire bitter taste. But it is
still edible.
