Green Rice

Green Rice

2 Tbs. chopped onion
¼ tsp. minced garlic (optional)
2 Tbs. butter
2 C. cooked rice
½ C. finely chopped parsley
1-1/4 C. milk
3 eggs, slightly beaten
1 C. grated Cheddar cheese

Sauté onion and garlic in butter; add rice, parsley and milk. Blend
in beaten egg and cheese. Pour into buttered casserole and bake in
pan of hot water at 350 degrees for 40 minutes or until firm.
