Scallops Saint-Jacques With Alpine Cheese Blend Vegetables

Prepare scallops through step 9 and begin to microwave Alpine blend - 20
minutes
Continue scallops; complete vegetables and serve - 10 minutes
SERVES 4
Scallops Saint-Jacques
Ingredients:
2 tablespoons garlic butter
6 ounces sliced baby portabella mushrooms (3/4 package)
1 pound bay scallops
salt and pepper, to taste
large zip-top bag
2 tablespoons flour
1/2 cup white wine
1 cup Alfredo sauce
1/4 cup sour cream
1 (20-ounce) package refrigerated mashed potatoes
cooking spray
1/4 cup shredded Italian cheese blend
2 teaspoons grated Parmesan and Romano cheese
Steps
1. Preheat large sauté pan on medium for 2-3 minutes.
2. Place butter in pan and swirl to coat. Add mushrooms. Cover and simmer 3
minutes, stirring occasionally.
3. Open and drain scallops. Salt and pepper to taste and place in zip-top
bag. Add flour; seal tightly and shake to coat.
4. Remove lid. Move mushrooms to outer edge of pan. Add scallops to center
and sauté uncovered 4 minutes, stirring scallops occasionally.
5. Place oven rack 6-8 inches from broiler, then preheat on broil.
6. Add wine, Alfredo sauce and sour cream to scallop mixture. Stir all
ingredients together and reduce heat to low. Cover and simmer 6 minutes,
stirring occasionally.
7. Place potatoes in microwave-safe bowl. Cover and microwave 3 minutes.
8. Place 4 individual casserole dishes on large baking sheet and spray each
with cooking spray.
9. Remove potatoes from microwave and stir. Divide potatoes equally into
casserole dish, moving potatoes to outer edge creating a pocket in center.
10. Divide scallop mixture evenly into each pocket.
11. Sprinkle each with 1 tablespoon Italian cheese and 1/2 teaspoon Parmesan
cheese blend.
12. Broil 4-5 minutes, or until golden brown. Serve.
Alpine Cheese Blend Vegetables
Ingredients:
1 (16-ounce) bag frozen Alpine blend vegetables
4 ounces processed bar cheese (1/2 bar)
1/2 teaspoon seasoned salt
Steps
1. Place vegetables in microwave-safe bowl. Cover and microwave on high 8
minutes.
2. Cut cheese into 1/2-inch cubes.
3. Drain vegetables. Add cheese and seasoned salt.
4. Cover and microwave on high 2 minutes. Stir to mix. Serve.
