Veal Piccata

Veal Piccata

Ingredients:
1/3 c all-purpose flour
1/2 tsp salt
1/4 tsp black pepper
1 lb lean veal sirloin four 4oz cutlets
2 tsp olive oil
1/3 c canned chicken broth
3 tbsp fresh lemon juice
2 tbsp wine white
1 tbsp light butter
2 tsp parsley, fresh, chopped

Directions:
mix: together in shallow bowl
flour
1/4 tsp salt
1/8 tsp pepper
coat veal with flour mixture
heat oil in skillet
cook cutlets till just cooked through/golden
set aside/keep warm
deglaze skillet : with broth,lemon juice and wine
(removing excess pieces of food)
reduce heat to med and reduce mixture by half
swirl in butter remianing seasonings, parsley
