Fresh Vegetable Fried Rice

Ingredients

2/3 cup of cooked, cold long grain rice (or whatever your left over rice
is will work!)
3 T peanut oil
2 cloves of garlic, crushed
1/2 t Chinese 5 spice powder (found in some local grocery stores, but
always at your Asian market)
1/3 C fresh green beans
1 green bell pepper, seeded and chopped
4 baby corn cobs, (canned) may substitute here or omit
1 oz. canned bamboo shoots, drained, chopped
3 fresh tomatoes, skinned, seeded, and, chopped
1/2 C cooked peas
1 t sesame oil

Directions

Heat wok; add peanut oil; heat till slightly smoking; add garlic and Five
Spice Powder; stir-fry quickly for 30 seconds (no longer you will have a
burnt mess!)
Add the green beans, green pepper and corn cobs; stir-fry for 2 minutes.
Add the bamboo shoots, tomatoes, peas and rice; stir-fry for 1 minute.
Sprinkle sesame oil atop the fried rice and serve immediately.

Note: Always used leftover cooked rice for your fried rice dishes. Fresh
cooked rice doesn't separate and you get a mushy fried rice.
A nice touch to this dish would be the addition of chopped nuts, of your
choice. Good for you and a great garnish.
