Vegetable Manchurian

For the Manchurian:

1 carrot chopped
Few florets cauliflower
1 potato chopped
1/4 cup Green peas
1/4 cup plain flour
1/4 cup Corn flour
4 tbsp Soy sauce
1 tsp chili paste
1 tbsp garlic paste
1 tbsp ginger paste
salt and pepper to taste
oil for deep frying

For the sauce:

4-6 green chillies finely chopped
1 chopped onion
4-6 red chillies
10 cloves garlic chopped fine
2 pieces ginger chopped fine
11/2 tbsp corn flour
1 cup veg stock
1-2 tsp sugar
1 tbsp soy sauce
2 tbsp oil
salt to taste
2 tbsp wine

Method:

For the Manchurian:

Boil all the vegetables , mash them and form into small balls and keep
aside. Now mix all the rest of the ingredients for the manchurian and
dip the balls in the mixture and deep fry themin hot oil.

For the sauce:

Heat a wok and add 2 tbsp oil fry the garlic ginger green and red
chilies for 2 minutes, now add the onion and fry for 2 more minutes. Now
add the stock, corn flour , soy sauce, salt and sugar and cook for 7
minutes. Remove from heat. just before serving reheat the sauce add the
manchurian balls and wine and mix gently and serve.

For Cauliflower or mushroom Manchurian:

Use the same sauce and same recipe for the manchurian but instead of
making balls dip the cauliflower florets or whole button mushrooms in
the batter
